STUFFED BAKED BUTTERNUT
Ingredients provided:
• Butternut
• Bacon
• Green beans
• Feta
• Crumble
• Rice (if selected)
Ingredients from own source:
• Salt and pepper
• Oil
Equipment required:
• Lined oven tray
• Cutting board and sharp knife
• Frying pan with lid
• Plate
• Serving platter
• Pot for cooking rice (if using)
Instructions:
• Set the oven to 180°C.
• Place the butternut face down on the lined baking tray and bake about 30 minutes until a sharp knife inserts easily into the skin.
• Cook the rice, if using.
• Trim and slice the green beans.
• Heat a little oil in the frying pan and fry the bacon. Once the bacon is cooked, transfer to the plate and cook the green beans in the same pan, adding a little water.
• Once the butternut is soft, remove from the oven and transfer to the serving platter. Scoop out the seeds and discard.
• Fill the hollow with bacon and green beans and arrange the rest around the butternut. Top with feta and the crumble.
