BOBOTIE
Ingredients provided:
• Onion
• Garlic
• Spices
• Ground beef
• Breadcrumbs
• Bay leaf
• Egg-milk mixture
• Rice (if selected)
• Vegetables (if selected)
Ingredients from own source:
• Salt
• Pepper
• Milk
• Oil for frying
• Chutney for serving
Equipment:
• Frying pan with lid for meat
• Long handled spatula
• Long handled fork
• Oven dish
• Small jug and fork
• Pot with lid for rice
• Pan with lid for vegetables
Instructions:
• Cook rice and vegetables.
• Slice the onion finely or grate. Peel and crush or grate the garlic.
• Heat some oil in a frying pan and add the onion and garlic. Cook and stir over medium heat about 3 minutes.
• Add the spices (they have already been roasted and ground) and stir through about 1 minute. Add more oil if it’s really dry.
• Add the meat. Use the long handled fork to break up the meat while it is browning. You are aiming for a loose texture, lightly browned. Turn off the heat, stir in the breadcrumbs and a little milk and put the lid on the pan.
• Turn the oven on to 180°C.
• Spray the oven dish with non-stick spray. Transfer the partly cooked meat into the oven dish and smooth the top.
• Insert the bay leaves randomly into the meat.
• Pour the egg&milk mixture into the jug and stir with the fork to mix well.
• Pour this mixture over the meat.
• Bake about 30 minutes (if you use a meat thermometer it should read 71°C).
• Serve the bobotie with rice, vegetables and chutney.
