Description
CUMIN LAMB STIRFRY
Ingredients provided:
• Marinated strips of lamb
• Spice mix
• Rice (if selected)
• Vegetables (if selected)
Ingredients from own source:
• Salt and pepper
• Oil
Equipment required:
• Frying pan or wok
• Spatula
• Pot for cooking rice
• Plates for vegetables
• Rack and tray
• Bowl for meat strips
• Serving platter
Instructions:
• Place the meat strips on the rack over a tray to come to room temperature and dry out a little bit.
• Cook rice (if using).
• Peel and slice vegetables for stirfry, keeping them separate from each other on plates (if using).
• Transfer the spice mix to the bowl and keep aside for the meat strips.
• Heat a little oil in the frying pan or wok and stirfry the vegetables, tipping them onto the serving platter as they are done.
• Add more oil to the pan/wok and stirfry the meat strips in batches, tipping them into the bowl with the spice mix. Once all the strips are done, mix well with the spices and transfer to the serving platter with the vegetables. Serve with rice.
• This is a “dry” stirfry – without a sauce – the lamb and spice combination is the star of the show.
