CURRY CHICKEN PASTA SALAD
Ingredients provided:
• Chicken fillet
• Pasta
• Selection of vegetables
• Cheddar
• Curry mayo dressing
Ingredients from own source:
• Salt and pepper
• Oil
Equipment required:
• Frying pan with lid for cooking chicken
• Pot for cooking pasta
• Serving bowl
Instructions:
• Allow chicken to come to room temperature and season with salt and pepper.
• Add the dressing to the serving bowl and keep aside.
• Peel, deseed and slice vegetables and add to the serving bowl.
• Heat some oil in the frying pan over medium heat and brown chicken all sides.
• Cover, reduce heat to low and cook chicken 20-25 minutes. Allow to cool, slice or cube and add to the serving bowl.
• Cook pasta, drain (reserving a cup of the cooking water) and add to the serving bowl, stirring everything together.
• Slice the cheese and add to the salad.
• Just before serving, add the reserved pasta cooking water and stir through.
