OMELETTE WITH MUSHROOMS AND CHEESE
Ingredients provided:
• Eggs
• Cream cheese
• Mushrooms
• Cheese
• Butter
Ingredients from own source:
• Milk
• Salt and pepper
• Oil
Equipment required:
• Non stick frying pan with lid
• Jug and whisk
• Cutting board and sharp knife
• Plate
• Paper towel
• Rubber spatula
Instructions:
• Thinly slice the mushrooms.
• Heat half of the butter and a little oil in the frying pan over medium heat and add the mushrooms. Season with salt and pepper and stir about a bit. Put the lid on the pan and let mushrooms cook until all liquid in the pan is absorbed.
• While the mushrooms are cooking, transfer the cream cheese to the jug. Break one of the eggs onto the cream cheese and mix well. Add a little milk and whisk until smooth. Break the rest of the eggs into the jug, season with salt and pepper and whisk well until frothy.
• Tip the mushrooms onto the plate and wipe the pan with the paper towel.
• Add the rest of the butter to the pan and pour the egg mixture into the pan, reduce heat, cover and cook until almost completely set.
• While the omelette is cooking, grate the cheese.
• As soon as the omelette is ready, turn the heat off, remove the lid and arrange the cheese and mushrooms on one half. Using the rubber spatula, fold the other half over the filling. Put the lid back on and let the dish rest to melt the cheese.
