PASTA WITH BUTTERNUT SAUCE AND FETA
Ingredient provided:
• Pasta
• Butternut
• Cream cheese
• Orange juice
• Herbs and spices
• Feta
Ingredients from own source:
• Salt and pepper
• Oil
Equipment required:
• Pot for cooking pasta
• Pan with lid for cooking butternut
• Cutting board and sharp knife
• Stick blender and large jug or food processor
• Serving bowl
Instructions:
• Peel, deseed and slice butternut.
• Heat some oil and a little water in the pan over medium high heat. Add the sliced butternut and cover. Reduce heat to medium and simmer until soft. Remove lid, turn heat up and let remaining liquid boil off.
• While the butternut is cooking, cook the pasta, drain and add to the serving bowl.
• Pour the orange juice into the jug and add the spices, cream cheese and butternut. Process until smooth and pour over the pasta.
• Serve with herbs and feta sprinkled over.
