STUFFED FRESH TOMATOES
Ingredients provided:
• Tomatoes
• Couscous
• Cucumber
• Basil
• Olive oil
• Balsamic glaze
Ingredients from own source:
• Salt and pepper
• Boiling water
Equipment required:
• Cutting board and sharp knife
• Heatproof bowl with lid
• Spoon
• Serving plate
Instructions:
• Tip the couscous into the heatproof bowl and cover with boiling water. Put the lid on and let sit until all water is absorbed. Season with salt and pepper and stir in a little olive oil.
• Dice the cucumber and chop the basil. Add to the couscous and mix.
• Half the tomatoes and scoop out the seeds with the spoon. If you wish, you can add the seeds to the stuffing.
• Scoop the couscous stufing into the tomatoes, drizzle with olive oil and balsamic glaze and serve.
